A study abroad program in Vienna, 2006, charmed the then University of Georgia student Jason Shaw.
Little did Shaw know how the harvesting techniques he learned in Italy would diversify and help develop the Georgia farming industry. Through Shaw’s profound understanding of agriculture the dynamo company has proven to be successful in growing olives in the Southeast.
Seasoned farmer and now Georgia State Rep. James S. “Jason” Shaw Jr. has loyally represented Georgia House District 176 in Atkinson, Lanier, Lowndes and Ware counties since 2010, but he is also recognized for his love of farming and the state of Georgia.
Shaw’s dynamic vision allowed GOF to achieve a status that no one including Thomas Jefferson else could.
In the 1820s, Jefferson imported olive trees and seeds for harvesting to Georgia and South Carolina but excessive humidity in the South did not allow the orchards to develop.
“Among plants olives contribute the most happiness of mankind.” Thomas Jefferson said.
For the Shaws change came after the first olive trees: Arbequina, Koroneiki and Arbosana were planted in 2009, and a Super High Density Planting Process was fully operational.
By 2012, over 60 acres of high-density plants producing over 5000 gallons of the purest virgin olive oil in the state, were flourishing. The new crop proved to be both exciting and educational but their true success lies in prioritizing olives more on quality than quantity. The intricate process allows for continued production of some of the best quality virgin olive oil in the world.
Shaw notes that when harvesting olives timing and temperature are crucial. Having a production mill near by was a must. True virgin olive oil has a 24-hour window before it fermates so processing the fruit quickly is essential. Not only does the trandensent company produce unique tasting olives but it has also created opportunities for other farmers who want to grow olives and produce the often called Liquid Gold.

Unlike other harvesting procedures the state of the art commercial process does not include shaking trees by hand causing the fruit to fall to the ground. A common practice involves hydraulic machines that take the fruit directly from the tree and put into bins. The olives are then taken to the hammer mill where the fruit is processed some more. The final result is a fresh and pure virgin-olive oil like no other.
