The Super Bowl isn’t the only celebration going on February 2nd, it also happens to be La Chandeleur, also known as National Crepe Day in France. The fete is rooted in the Catholic holiday of Candlemass, a feast to commemorate the purification of the Virgin Mary and the presentation of Jesus. The day also celebrates the oncoming of spring, like Ground Hog Day in the U.S., but in this case, there’s something good to eat along with the celebration, which— by the way— lasts all month.
Crepes are relatively simple to make, even without a special crepe pan, and the possibilities for fillings are endless. Here are a few recipes to get your La Chandeleur celebration going and a list of the best creperies in DFW.
Easy Crepe Recipe
2 cups flour
2 cups milk
3 eggs (slightly beaten)
3 1/2 tablespoons melted butter
1 tablespoon powdered sugar
1 pinch salt
In a large bowl, place eggs, flour, sugar and salt. Whisk in milk and butter. Let mixture rest at least one hour before making crepes. Using a slightly oiled saute or crepe pan, ladle 1/8-1/4 cup of the batter into center, then swirl around to cover entire bottom of pan. When the crepe starts to curl around the edges, gently flip it over and cook for one more minute. Stack crepes and cover with foil until ready to use.
You can fill the crepes with butter, sugar, Nutella or jam, but crepes filled with creme de marrons (a sweet chestnut puree) are truly sublime. This simple recipe uses roasted, peeled chestnuts that can be found at Whole Foods or other supermarkets.
Chestnut Spread Recipe (Créme De Marrons)
12 oz roasted chestnuts (peeled)
1 cup granulated sugar
2 cups water
1 tablespoon vanilla
1. Combine nuts, sugar and water in a saucepan and bring to a boil. Reduce heat and simmer 25-35 minutes until the majority of the liquid is evaporated. Remove from heat and add the vanilla.
2. Strain the nuts, reserving the sugar syrup and transfer to a food processor and blend until smooth.
3. Add syrup slowly until desired consistency is obtained. Allow to cool before refrigerating.
