Cupcakes for Courage
This cupcake truck and bakery (Courageous bakery) provides baked goods to help raise money for cancer research and the Ride Janie Ride foundation. Co-owner Kathryn Pekarik was diagnosed with non-Hodgkins T-cell Lymphoma in 2010. Her sister, Laura, hosted a bake sale at an event to help pay for the medical costs. Inspired by the rave reviews the two sisters created Cupcakes for Courage.
You can check out the truck’s schedule for the city or stop by the bakery in Elmhurt to indulge in flavors including cookies and cream, chocolate dipped potato chip, sweet potato pie, and more.

While they used to have a food truck, it seems to be closed for the unforeseeable future. You can order online from Sweet Miss Giving’s with free shipping on cookies, muffins, and brownies.
Molly’s Cupcakes was created in honor of the founder’s third-grade teacher, Miss Molly, and the cupcakes she would bake for each of them on their birthdays. Also in her honor, they donate a portion of profits to schools in the Chicago community.
